The clay pot, referred to as "donabe" in Japanese, is one of the country's earliest cooking implements. For use in kilns and high-heat cooking, earthenware pots are formed of clay with appropriate characteristics. This type of clay is highly porous, which means it takes a long time to heat up, but once it reaches its peak temperature, it retains heat quite well. Since the portable burner transforms it into an insta-hot pot, every Japanese family owns at least one donabe. Start with the most basic donabe, which best resembles an oven-safe casserole dish.
